Pork Rib Stew (Twaejigalbichim)

Ingredients: A 1 1/3 lb. pork ribs, 2 tbsp. salad oil, B 2 1/2 tbsp. soy sauce, 1 1/2 tbsp. sugar, 6 btsp. green onion, 2 btps. garlic, 2 tbsp. ginger juice, 2 tbsp. rice wine C pine nuts, 1/3 carrot, 20 gingko nuts, 2 potatoes, 2 green peppers, 2 jujubes

1. Have the butcher cut the spareribs into 2" long pieces and score them on both sides.
2. Stir-fry the gingko nuts in a lightly salted pan until they turn green color. Then rub off the top-skins.
3. Fry the spare ribs in a heated oiled pan until brown. Remove excess oil and place the ribs in another pan.
4. Add half of the mixed B ingredients and 2 cups water to the #3 ribs and simmer them on high heat for 10minutes.
5. When the ribs are tender, add the gingko nuts, the carrots and potatoes cut into flower shapes and the remaining seasoning and stir-fry until glazed.
6. Place the seasoned ribs and vegetables in a serving dish and garnish with the sliced jujube and powdered pine nuts.

Black hottok

I came home earlier than hubby last Friday. When I went to the kitchen, I saw this on the table.

It's an overcooked honey hottok (a Chinese stuffed pancake). The brown hottok became black. How can hubby live without me? hehehe...

When hubby came home, he asked me with smile on his face if I saw the hottok. I said yes and told him that I already threw it away. My hubby said he put it in the toaster and there it was! Dyaraann...The black hottok. Ngeeekkk...

Koreans never eat the black part of the overcooked food. They believe that it can cause cancer. Even when we grilled something like pork or sausages, we always cut with scissors and throw away the dark part. In Korea, eat raw food but not overcooked.

What's the latest issue?

It's so exciting to read and watch the video of the events that Landrover held. And it's great to know all the upcoming events and shows in advance so that we can book earlier for the years best loved Land Rover shows. I feel great whenever I read the news and see the adventures done by the Land Rovers. But I wish I was one of them or at least I was in that place watching their adventures in person. Spareribs in Sweet Sauce (Twaejigalbi Kangjong)

Ingredients: 1 1/3 lb. pork ribs, black pepper, ginger juice, MSG, cornstarch powder, salad oil, 2 Korean green peppers, 2 red peppers, 1/4 round onion, carrot, 2 garlic, 1/4 cup sweet sauce

1. Remove excess fat from the spareribs. Boil them and then score and marinate them in the seasoning.
2. Halve the red peppers and green peppers to remove the seeds. Cut the peppers, carrot and round onion into flat pieces and fry them lightly in an oiled pan.
3. Dip the spareribs in cornstarch powder and deep-fry them in oil.
4. Place the deep-fried ribs, vegetables and sweet sauce in a pan and simmer together on low hear.

1. This is a high-grade dish which can be made easily for guests as a basic side dish if you prepare the sweet sauce beforehand.
2. To make the sweet sauce: 1 cup nicely aged soy sauce, 2/3 cup water, 1/2 lb. grain syrup (like dark corn syrup), 1 oz. ginger juice, 1/3 cup sugar, 1/4 cup rice wine. Place the above ingredients in a pan and simmer them in low heat until thick.

Is losing weight is as easy as gaining weight?

While we were having a meeting, my boss complained because we always throw away some cooked rice. Although lunch is free, I don't eat lunch at work. I eat at home with my hubby. Red Ginseng candies

I always see lots of candies in my father in law's house. They are put in a big basket displayed on top of the kimchi refrigerator. The candies are not just the cheap candies that we can buy in the supermarket. They are Korean health products, Renesse Red Ginseng Candies. The Ginseng is a common herb grown on the shaded mountainsides of Korea. I don't like the taste of ginseng. It's bitter and has strange smell. My mother in law usually gives us ginseng drinks but I don't drink it eventhough it's a healthy drink.

We went to my father in law's house and my hubby took this ginseng candies in the basket and brought them home.

I don't wanna try this traditional herb candies because of their smell but my hubby offered one so I tried it. Ummmm... the smell is still strange but the taste is not bad.

Kimchi (Korean Pickle)

In major Western cities as well as in most East Asian countries one may buy a pack of kimchi at large supermarkets. The popularity of kimchi is attributed to the unique blending and fermentation of vegetables, herbs, pickled fish, fresh seafood, and such spices as red pepper, garlic and ginger. Kimchi is rich in vitamins, proteins, and other essential nutrients and Koreans used to rely on it as a source of nutrients when fresh vegetables were scarce in winter.

Kimchi may be classified into two main types- seasonal kimchi and winter kimchi. There are many varieties of seasonal kimchi depending on the availability of certain vegetables. A large stock of winter kimchi is prepared in early winter and lasts throughout the winter until spring vegetables are available. In recent years, however, owing to the development of green-houses, vegetables are available year round. Kimchi is an essential part of a Korean meal. It smells awful but tastes delicious.

Here's the Chinese cabbage kimchi from my mother in law. I never tried to make kimchi by myself. My mother in law told me that she would teach me on how to make kimchi before she dies so she just delivers me some at home. But I saw her making kimchi many times but she never let me help her.

Here is a recipe for making Kimchi:

Ingredients: 2 cabbages, 1/2 pear, 1/2 carrot, 2 cups of salt, 2 heads of garlic, half a head of ginger, half a bunch of shallots, 1 onion, shrimp paste (100g), 3 tbsp. of fish sauce, 1 1/2 cups of chilli powder

1. Make salty water and pour it onto the cabbages.
2. Leave it for 5 hours at least, to dehydrate the cabbages.
3. Rinse the cabbages very well to remove the excess salt and drain.
4. Cut the shallots into 1" lenght and carrot into thin strips.
5. Mix the peeled garlic, onion, ginger and pear into a mixer.
6. Put the #3 and #4 ingredients into a bowl and mix it with the shrimp paste, fish sauce and chilli powder.
7. Coat every leaves of the cabbages with the #6 ingredients.
8. Keep the kimchi in the refrigerator for 3 days before eating.

1. Apple can replace to pear.
2. Dehydrating the cabbages is very important for the texture of the Kimchi. Salting and dehydrating the cabbage makes it crunchy.

Nursing school

When I hear that someone's course is a doctor or a nurse, I always think of someone who earns much money. I believe that doctors and nurses earn much specially when they work in the States. They are so lucky that they got the nursing course and they must be proud that they are doctors. I also think of them as smart students because it's hard to pass the exam and get a license.

My cousin was studying nurse but she got married a year before she can finish her course. My aunt cried a lot because she spent much and did everything so that she could send her daughter to a nursing school but she got disappointed. Now I heard that my aunt wants my cousin to pursue her studies even now that she is already married and has a kid. She's willing to send her daughter again to any of the famous lpn schools that she heard a lot from her friends.

I hope my cousin will grant her mom's request for her and that she will study harder.

Baked Whole Chicken (Tongdakkui)

Ingredients: 1 whole chicken, 1 tsp. salt, 3/4 oz. butter, 1 round onion, 1/2 carrot, 1/2 cup sweet soy sauce, 1 knob ginger, parsley, 1 tomato, ribbon

1. Clean the whole chicken and sprinkle it with salt, black pepper and ginger juice.
2. Cut the round onion and carrot into thin strips. Layer half of the vegetables on the bottom of the oven pan, then place the chicken on these vegetables and layer the remaining vegetables on top of the chicken.
3. Bake the chicken for 10 minutes in an oven.
4. Remove the vegetables from the chicken and bake for 10 minutes more. Then baste it with the sweet soy sauce and bake it for 20 minutes more.
5. Wrap the legs of the chicken with foil and tie the ribbon on the neck. Garnish with the tomato and parsley.

What's for today's menu?

I have no idea on what to cook now so here I am blogging while thinking of what to cook for lunch. My hubby will come soon and I still don't know my menu. It's really hard and stressful to think on what to cook 2-3 times a day. I told my hubby that the only thing that he can help me is to say what he wants to eat so that I just only prepare it and doesn't need to think of the menu. But my hubby is not helpful enough because when I asked him on what he wants to eat he always says it's up to me. Yaiks!

I love cooking

You know how I love cooking, don't you? I love cooking and I'm learning it everyday. I'm trying to cook delicious food for my hubby everyday. Do you believe in saying that The Way to a Man's Heart is Through His Stomach? My mom always reminds me to cook and prepare good and delicious food for my hubby which I always do. Although i'm tired at work, I still have spend my time cooking and preparing food for him. I sometimes search on the internet the food that I prepare.

My boss' wife asked me last time if I can cook well. I said I can cook but not well. She said she's going to a culinary school and she wants me to join her. I thought about it many times and my hubby is not against it. I love cooking and I think it's a great idea to learn more about cooking. Just in case that we'll live in another country, we are planning to open a restaurant so I think I really need to go to a culinary schools.

I heard about these culinary schools in california and I have the desire to learn here. It's the Culinary Academy that can help me gain the skills that I need for a successful culinary career. I want to be a professional cook and I'm always excited when I think of me cooking in my own restaurant.

Drinking Vinegar

Oh well, they are drinking vinegar that I got as a present like Chuseok. If you go to the market, you'll see this drink that the saleslady always endorse and asks the customers to have a taste of this healthy drink.

The taste is not bad but a little bit sour. And that's the vinegar in Pomegranate, blackberry and blueberry flavor. Want some?

fashion school

My co-worker is going to quit her job. She has been working for only a couple of months and now she's leaving us. She's going to another country to pursue her career. I didn't know that her profession is a fashion stylist. She's teaching English because she studied in America and stayed there for many years and now she's going to enter a fashion school again but to another country. I don't want her to leave but there's nothing I can do. I'm sad that she's leaving but also happy for her because i'm sure going to a better fashion design school is the best way to reach her goal and achieve her dream.

She's going to a fashion school that will provide her the training that she needs to advance in her fashion career. I also have the heart in designing clothes, my house and food. I like decorating things so I'm also thinking of going to a fashion school. What do you think of that? Do you think a fashion career may be the right path for me?

I may recommend this fashion school to my co-worker. She may be interested and I'm sure it's not too late to let her know about it.

Broiled Beef Ribs (Seogalbigui)

Ingredients: 4 lb. beef ribs, garlic, 6 tbsp. rice wine, 5 tbsp. sugar, 9 tbsp. chopped green onion, 3 tbsp. soy sauce, chopped garlic, 6 tbsp. sesame salt, 6 tbsp. sesame oil, lettuce leaves, green onion strips, round onion, pine nuts

1. Clean the ribs. Score the meaty parts of ribs taking care not to cut the bones. Flatten the rib meat, score deeply and place them in a bowl.
2. Sprinkle the ribs with the sugar and rice wine and mix well.
3. Mix the soy sauce with the chopped green onion, garlic, sesame salt, and sesame oil to make the seasoning sauce.
4. Add the seasoning sauce to the #2 ribs and let them stand for 1 hour.
5. Place the ribs on a hot grill and broil turning them several times.

medical career

When I was in Elementary, I always wanted to become a teacher. Whenever I played with my friends, I was always the teacher and my friends were my students. But that dream changed when I entered in High School. I wanted to become a Secretary because instead of teaching, I wanted to work in the office. When I graduated High School, it changed again and I dreamt of becoming an Engineer. My dream always changed but i'm willing to work either in the office, school, or field (road). Anything will suit me but i'm interested in those career.

I'm okay in any career because I can easily adjust myself except medical career. I never thought of becoming a nurse or a doctor. I'm afraid of blood, shots, surgery and everything related to medical career. But in this point of our lives, we don't have to think on what our dreams are but think on what career is in demand. Everyone knows that medical career is in demand specially if you want to work in the US and other Western countries.

If your career is related to medical, you should attend the medical assistant training. A program that is now ranked third in the nation in terms of job growth. Do you also know that by the year 2014, the ultrasound technican demand will increase by another 35%? So it's not too late, you can start now and attend at the ultrasound schools.

If I don't work, I want to pursue my career even when I already got a degree. I have the heart of helping others so I'm jealous of the doctors and nurses because they can help people. I wish I'm a brave person and not afraid of the blood. If that so, I would also take a medical course not only because I can make much money but also to help others. How about you? Skewered Boiled Beef (Hwayangjok)

Ingredients: 1/3 lb. pressed meat, 6 dried brown, oak mushrooms, 5 bellflower roots, 1 cucumber, 2 carrots, 2 eggs, 1 tbsp. chopped pine nuts, 1/2 tbsp. sesame salt, 1 tsp. sesame oil, 1 tbsp. chopped green onion, 1 tbsp. chopped garlic, 1/2 tbsp. sugar, black pepper, red raddish, 2 tbsp. soy sauce

1. To make the pressed meat: Boil the beef or the pork. Wrap the boiled meat in a cloth and pressed it with a heavy weight. When the meat is cooled, slice it into strips 2 1/3" long and 1/4" thick.
2. Soak the dried mushrooms in water and remove the stems. Slice them into 2 1/3" lengths.
3. Shred the bellflower roots into strips 1/4" thick. Cut the carrot into strips 2 1/3" long and 1/4" thick. Scald them in boiling water.
4. Choose a thin, tender cucumber and cut it into strips 2 1/3" long and 1/4" thick. Sprinkle with salt.
5. Separate the whites and yolks of eggs and beat gently. Mix the beaten egg whites, and also the yolks with 1 tbsp. cornstarch flour, 1 tbsp. water and salt each. Fry these mixtures in a square pan in thick sheets and let them cool. Cut the egg sheets into strips 2 1/3" long.
6. Season all the ingrediensts except the egg strips with the soy sauce, sesame salt, black pepper, sesame oil, green onion and chopped garlic and fry lightly.
7. String the ingredients on skewers alternating the colors. Sprinkle the top with powdered pine nuts on a plate. Garnish with red radish and parsley.

Hint: Bellflower root is a tasty addition to this dish. It is an alkaline food containing sugar, fiber, calcium and iron.

Thanksgiving Day Food

On Thanksgiving Day everyone (except men) is very busy preparing and cooking food for the family to share and for Jesa (an ancestor-worship ceremony (rite) ). While my mom in law, sister in law and me were busy in the kitchen, the men went to Namsan Tower with the kids (my sister in law's son and daughter). My mother in law just taught us what to prepare and we managed everything. Although many myonori (daughter in laws) don't like this occasion, but for me it's fun to make and cook specially some jeon (fried food). Making different kinds of jeon is always included in every occasion specially when there's jesa. Here's some of the jeon that me and my sister in law made.

(From top to bottom) Fried filleted fish, fried beef, and fried mushrooms that my mother in law gave me. She gave me much and I think we have to eat jeon for days every meals.

Except from jeon, songpyon (a half-moon-shaped rice cake steamed on a layer of pine needles) is another food that is famous on Thanksgiving Day. You say thanksgiving day and people specially kids will think of "songpyon". Food that everyone enjoys to make including kids specially in the rural area. Here are the songpyon.

I've never tried to make songpyon because my mother in law just buys them in the supermarket but I love to experience on how to make one someday.

Deajigalbi restaurant

There's a newly opened restaurant here in front of our apartment building. That was used to be a seafoods restaurant but didn't run well so it was sold out and now became a daejigalbi (grilled pork ribs) restaurant. When you enter the gate of the building, you can smell the delicious food from that restaurant so last weekend, hubby and I went there to try their menus. We ordered daejigalbi. Now I knew the reason why there are always many people there.

After meal, they also served noodles for free. It's up to you if you want mulnaengmyun or bibimnaengmyon. I had the mulnaengmyun and hubby had the other one. Here's my mulnaengmyun.

Fried Pork in Egg Batter (Tonjon)

Ingredients: 1/2 lb. ground pork, 1 cake bean curd, 1/2 cup flour, 2 cloves garlic, 1 large green onion, 1/4 lb. kimchi, parsley, sesame oil, 2 eggs, salt, black pepper, MSG, 1 tsp. ginger juice

1. Wrap the bean curd in a clothe, squeeze out the water and mash it.
2. Squeeze out the water from the kimchi. Chop the kimchi and green onion finely.
3. Mix the #1, #2, ingredients, ground pork, garlic, salt, black pepper, sesame oil and MSG and shape the mixture into round, flat patties.
4. Dip the patties into flour, then into beaten egg and fry them until golden brown. Garnish with the parsley and green onion cut into thin strips.

1. Season the kimchi and bean curd and mix them thoroughly with a flat wooden spoon or with your hands so that the patties will be nicely shaped. You may used parboiled mung bean sprouts instead of the kimchi. When draining the fried food in a wicker tray, make only one layer.
2. Be sure to remove all the fat from the pork as it may otherwise be too greasy. Also, cook the pork well.

Stir-Fry Pork with Kimchi on a camp

My hubby said he wanted to eat daejigogi kimchibokkum so I made some for lunch the day before we went camping. He said it was delicious so he told me to make more and bring some for our camp. So the night before we left, I cooked some kimchi bokkum and brought some. Although we ordered chicken for our lunch, my hubby said the kimchi bokkum was more delicious. We ate it for our dinner. I was so happy because I saw my hubby ate much on the food that I prepared.

Storage for my make up and jewellery

Except from cooking, I also like travelling. I travel to some countries and I enjoy my adventures here in Korea. Wherever I go, make up is always with me. I can't go out without make up even when I just go in the forest, mountain, sea etc. I have a small cosmetic bag that I always bring with me and now it ruined because of the ink that poured in my bag. Now I need to get another one because everything is topsy-turvy in my bag. I sometimes turn the contents of my bag so that I can find the lipstick that I need. It's very annoying specially when I'm in a hurry.

Skewered Pork and Kimchi (twaejigogi kimchisanjok)

Skewered Pork and Kimchi (twaejigogi kimchisanjok)

Ingredients: 1/2 lb. pork, 1/2 lb. kimchi, 1 tbsp. sugar, 2 tsp. sesame oil, 10 small green onions, 1/2 cup flour, 1 egg, various seasonings, parsley, red radish

1. Cut the pork into 1/3"x1/3" strips and pound the pork strips with the back of knife to tenderized them. Marinate them in the seasoning sauce.
2. Cut the kimchi into 3" lengths, and squeeze out the water. Season it with the sesame oil and sugar.
3. Cut the small green onions into 3" lenghts.
4. String the pork, kimchi and green onion strips alternately on skewers. Dip one side of the skewered food into flour.
5. Dip the #4 skewered food into beaten egg and fry it until golden brown.
6. Garnish with the parsley and red radish and serve with the seasoning sauce for dipping.

Hint: A tasty variation is angelica shoots instead of kimchi.

Chicken on a camp

My hubby said he doesn't feel like eating samgyopsal when we went on a camp last Sunday. Although samgyopsal is delicious in a camp but he said it's a little bit complicated to cook so he said we had to make it a simple one. We ordered chicken on our way to the recreation forest. The chicken wasn't delicious but eating outside specially in a campsite made everything delicious.

We arrived at the campsite in the afternoon and hubby said he was very hungry so we had lunch first before we set up the tent. It was a great idea that we ordered chicken instead of samgyopsal or else we had to cook first after our long trip.

Skewered Beef with Vegetables (Chapsanjok)

Skewered Beef with Vegetables (Chapsanjok)

Ingredients: 1/4 lb. beef, 1/4 lb. bellflower roots, 10 small green onions, 2 oz. bracken (fern shoots), 1/2 carrot, 5 dried brown oak mushrooms, seasoning sauce: (3 tbsp. soy sauce, 1 tsp. sesame salt, 1 tbsp. green onion, 1/2 tbsp. garlic, sesame oil, black pepper, MSG), skewers

1. Cut the beef into thin slices about 1/4" thick. Score the slices evenly and cut them into 1/3"x3" strips.
2. Soak the bellflower roots to remove the bitterness. Scald in boiling water, cut into 2 3/4" long pencil-wide strips and pound them with the back of knife to tenderize.
3. Trim the small green onions and dried mushrooms and cut them into 2 3/4" long strips.
4. Cut the bracken and carrot into 2 3/4" long pencil-wide strips and scald them slightly.
5. Make the seasoning sauce.
6. Marinate the beef on one-third of the seasonings sauce for 20 minutes.
7. Mix the carrot, bracken, small green onion and bellflower roots with the seasoning sauce.
8. String the above ingredients on skewers alternationg the colors and fry them in a fry pan.

Ingredients: 2/3 lb. liver, 1 egg, 1 cup flour, salt, black pepper, lemon, olive

1. Remove the membrane from the liver and rinse to remove any blood.
2. Slice the liver thinly and score and sprinkle it with the salt and black pepper.
3. Dip the liver into flour and then into beaten egg.
4. Fry the liver in a moderately hot oiled pan until golden brown and garnish with the lemon and olive.

1. Soak the liver in water to remove any blood; otherwise the fried liver becomes black.
2. Score the liver; otherwise the fried liver will curl up.

Who owns this phone?

Yesterday, I've got a missed call on my cellphone. I don't know the number so when I checked all my miss calls, I saw that there were three more missed calls that i've got from that same number. But when I saw the area code, I don't know anyone living in that area. So, I wondered if I know the owner of this phone or it's just a telemarketer who wants to offer me something. I'm afraid to call this marketer because once you called them, they won't stop calling you at least 2-3 times a day. That's horrible!

Now, I'm really curious! Who Owns This Phone number? Do I have to call back? How about if it's an annoying caller? Am I willing to get annoyed everyday if I call back? Oh well, I don't want to be disturbed when I'm asleep. I don't want to ruin my cooking, either. But, how about if I know the owner and she needs my help? Oh well, I'm confused now! I wish there's also a reverse phone look up service here like in the United States and Canada. A service where you can find out the address and owner of that phone even if it is an unlisted number.

I'm proud of him

I'm always amazed and proud of people who accomplished lots of things in their lives. One of these people that I'm proud of is the thought leader in finance and respected businessman, Mr. Alan Quasha. Deep Fried Chicken Legs (Taktaritwigim)

Ingredients: 6 chicken legs, 1 tbsp. ginger juice, 1/2 tbsp. salt, 1 egg, 1/2 cup cornstarch powder, black pepper, MSG, frying oil, parsley, red radish

1. Loosen the meat from the bones being careful to leave it attached at the lower end. Score the meat to tenderize and sprinkle it with the ginger juice, black pepper, MSG and salt rubbing the seasonings in.
2. Pour the beaten egg evenly over the meat.
3. Dip the chicken legs into the cornstarch powder and deep-fry them twice in boiling oil.
4. Place the deep-fried chicken legs on a plate and garnish with the parsley and red radish.

Hint: Place the cucumber, carrot, cabbage and boiled egg white cut into thin strips in a bowl and sprinkle the sieved egg yolk on top. Serve the deep-fried chicken legs with these vegetables.

It's too annoying!

I can't stand it when someone calls and offers me something that I don't need. I don't know how on earth they got my number and why they keep calling me. They bothered me a lot specially when i'm busy cooking, doing office work or sleeping. And the most terrible thing is - they don't know how to stop the conversation even when you said that you're busy or not interested in their offer. It's too annoying! I can't stand them!

Well, it's not only me who complained about this matter but all of my co-workers and friends, too.
